Veggie Pizza
Makes 3 Pizzas
Ingredients
Crust: Makes 3
- 1 ½ cups of whole wheat flour
- ¾ th cup of water
- ¾ th teaspoon rock salt
- 1 ½ teaspoon dried oregano
Tomato Sauce
- 6 medium sized tomatoes- deseed and chop.
- 2 stalks of celery- diced small
- 1 large bell pepper- color of your choice
- 1 jalapeno- chopped
- ¾ th teaspoon rock salt
- ¾ th teaspoon dried oregano
- Pinch of asafoetida- optional
- 1 ½ teaspoons jaggery- replacement for sugar
- ¼ th cup of water or as needed.
For Cheese
- ½ cup cashews soaked
- ½ cup chopped cauliflower- boiled
- 2 tablespoons lemon juice
- 1 teaspoon water
- ¼ teaspoon black pepper powder
- ¼ teaspoon dried oregano
- ½ teaspoon rock salt
Toppings
- Olives Black- cut
- Bell Peppers- red, green, yellow- sliced.
- Vegetables of your choice
Method
- For Dough- Combine all crust ingredients and knead them into a dough. Keep aside for 15 minutes.
- For cashew cheese- Blend all cheese ingredients until smooth and keep aside.
- For crust- Combine all crust ingredients and knead them into a dough. Keep aside for 15 minutes.
- Preheat the oven to 400 degree fahrenheit with the empty Pizza tray inside.
- For Tomato sauce- Add tomatoes into a blender and puree.
- Heat a pan, add the diced celery and add ¼ th cup of water and cook with the pan covered for 3 minutes.Now add the chopped bell pepper and chopped jalapeno and cook for another 2 minutes.Add the tomato puree, stir and cover the pan and cook for 7-10 minutes on medium heat. Add the oregano, asafoetida and jaggery and cook for another 2 minutes. Switch off the heat and add salt and mix. Keep aside.
- Divide the dough into 3 portions and roll to make 3 thin crust pizza base. Poke holes with a fork.
- Transfer the crust to the preheated baking tray and bake for 400 degrees Fahrenheit- without the toppings for 10 minutes. When done, take it out.
- On each baked crust, spread the tomato sauce and 1 tablespoon of cashew cheese. Add the vegetable toppings. May add dollops of cheese on the top- optional. Bake at 355 degrees fahrenheit for 15 minutes. Cut and serve.

- 1 jalapeno- chopped

- ¾ th teaspoon dried oregano
- Pinch of asafoetida- optional
- 1 ½ teaspoons jaggery- replacement for sugar
- ¼ th cup of water or as needed.
